Cucumber-And-Pepper Relish

What You Need: |
|
|
2 medium-sized cucumbers
1 tablespoon strained fresh lime juice
1 teaspoon salt
2 green bell peppers, sliced lengthwise into halves, seeded, deribbed and cut into 2-inch squares

How To Cook: |
|
|
1. With a small, sharp knife, peel the cucumbers and slice them lengthwise into halves. Scoop out the seeds by running the tip of a teaspoon down the center of each half.
|
2. Then cut the cucumbers into 2-inch lengths. In a serving bowl, stir the lime juice and salt together until the salt dissolves.
|
3. Drop in the cucumbers and peppers, and turn them about with a spoon. When they are evenly coated with the lime mixture, cover tightly with foil or plastic wrap and marinate at room temperature for at least 8 hours before serving.
