Tomato Butter

What You Need: |

8 tablespoons (1 quarter-pound stick) unsalted butter
2 tablespoons tomato paste
½ teaspoon salt
¼ teaspoon sugar

How To Cook: |
|
|
1. Cream the butter with an electric mixer set at medium speed or by beating it against the side of a bowl with a wooden spoon.
|
2. When it is light and fluffy, beat in the tomato paste, salt and sugar.
|
3. Transfer to a serving bowl and chill until ready to serve. Serve cold, with hot grilled or fried fish.
