Hot Orange Pudding
(Hsi - Mi - Chu - Keng)
What You Need:
  • ½ cup pearl tapioca
  • 1 large orange
  • 2½ cups cold water
  • ¼ cup sugar

  • How To Cook:
    PREPARE AHEAD:
    1. In a small bowl, cover the tapioca with ½ cup of cold water and let it soak for at least 4 hours.

    2. With a small knife, peel the orange and remove the white membrane clinging to each section. Break the orange meat into small pieces.

    3. Have the tapioca, orange and sugar within easy reach.

    TO COOK:
    1. In a 2-quart saucepan, combine 2 cups of cold water with the sugar. Bring to a boil over high heat, stirring until the sugar dissolves.

    2. Drain the tapioca and pour it into the pan slowly, stirring constantly. Cook over moderate heat, stirring, for 2 minutes until the pudding thickens.

    3. Stir in the orange and bring to a boil again. Serve at once.

    To Serve: 4 to 6
