Watermelon Shells Filled With Fruit
(Shih - Chin - Kuo - Pin)
What You Need:
  • 1 medium-sized, firm ripe watermelon (about 10 pounds)
  • 24 canned litchis, drained
  • 8 canned loquats, drained
  • 8 preserved kumquats, drained
  • 8 canned water-pack kumquats, drained

  • How To Cook:
    1. Using a cleaver or large, sharp knife, cut the melon in half crosswise. Scoop out most of the melon pulp with a large spoon, leaving a shell of pulp about ˝ inch thick inside each half.

    2. Carefully remove and discard all the watermelon seeds. If desired, cut a design in the outer rind with a sharp knife or scallop the top edges of each melon half.

    3. Cut the melon pulp into 1-inch cubes or, with a melon baller, shape it into balls. In a large bowl, combine the melon cubes or balls with the litchis, loquats and kumquats.

    4. Spoon the fruit into the two melon shells, dividing the fruit evenly between them. Chill thoroughly before serving.

    NOTE: Other fruits-such as cantaloupe or honeydew melon balls, orange sections or apple wedges-may be added to the mixture in the melon shells, or substituted for the fruits listed above if these are not readily available.
