Beef Stew With Bacon, Onion, And Sweet Potatoes

What You Need: |

1 pound beef stew meat (1-inch chunks)
1 can (about 14 ounces) beef broth
2 medium sweet potatoes, peeled, cut into 2-inch chunks
1 large onion, cut into 1½ -inch chunks
2 slices thick-cut bacon, diced
1 teaspoon dried thyme
1 teaspoon salt
¼ teaspoon black pepper
2 tablespoons cornstarch
2 tablespoons water

How To Cook: |

|
1. Coat slow cooker with nonstick cooking spray. Combine all ingredients except cornstarch and water in slow cooker; mix well.
|
2. Cover; cook on LOW 7 to 8 hours or on HIGH 4 to 5 hours or until meat and vegetables are tender.
|
3. With slotted spoon, transfer beef and vegetables to serving bowl; cover with foil to keep warm.
|
4. Turn slow cooker to HIGH. Combine cornstarch and water until smooth.
|
5. Stir into juices; cover and cook 15 minutes or until thickened. Spoon sauce over beef and vegetables.
