Ackee And Saltfish
What You Need:
  • 1 pound codfish
  • 24 ackees
  • 2 oz fried bacon
  • 4 oz margarine or two tablespoons oil
  • 2 tablespoons margarine or butter
  • 1 large onion
  • 1 medium tomato
  • ¼ of a sweet pepper
  • Scotch bonnet pepper to taste

  • How To Cook:
    1. Soak fish overnight and discard the water. Cover with cold water and boil until tender.

    2. Skin, debone and flake, and set aside.

    3. Prepare ackees removing seed and pink lining.

    4. Boil quickly until soft but whole.

    5. In a separate pan, add oil or melt margarine, saute onions tomatoes and pepper.

    6. Simmer a few minutes, and then add the bacon, fish and ackees. Simmer for two minutes.
