What You Need: |

4 eggs
˝ cup sugar
2 cups milk, scalded
1˝ teaspoons vanilla extract
˝ teaspoon ground nutmeg
4 very ripe bananas, peeled and mashed

How To Cook: |
|
|
1. Combine the eggs and sugar and beat lightly.
|
2. Stir in the scalded milk and pour the mixture into the top half of a double boiler set over hot water.
|
3. Cook, stirring constantly, until the custard thickens and coats the spoon.
|
4. Cool, stir in the vanilla and nutmeg, and combine with the mashed bananas in an electric blender or food processor.
|
5. Puree; pour into a shallow pan, cover, and freeze for about 2 hours in the freezer compartment of your refrigerator.
|
6. Remove from the freezer, beat well, and return to the freezer until set or freeze in an ice cream maker according to the manufacturer's directions.
