How To Cook: |

1. Boil beets in salted water until tender.
|
2. Drain, reserving the water.
|
3. Peel the beets and dice.
|
4. Combine sugar, cornstarch and salt in the top of a double boiler.
|
5. Gently stir in ¼ cup of the liquid from the cooked beets and the orange juice.
|
6. Cook over boiling water until thick and smooth stirring constantly.
|
7. Remove from the heat. Stir in remaining ingredients.
|
8. Add the diced beets and mix lightly. Keep over hot water until ready to serve.
