Blue Drawers - Tie Leaf
What You Need:
  • 3 cups cornmeal
  • 2 cups grated sweet potatoes
  • 1 cup flour
  • 1 teaspoon salt
  • 2 cups coconut milk
  • 1½ cups brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon mixed spice
  • 2 tablespoons melted margarine
  • 1 cup grated coconut
  • ¼ cup raisins

  • How To Cook:
    1. Combine cornmeal, sweet potatoes, flour, salt, mixed spice, margarine, grated coconut and raisins.

    2. Sweeten coconut milk and sugar. Add vanilla.

    3. Add milk mixture to cornmeal mixture and blend well.

    4. Prepare banana leaves by cutting off centre vein and holding leaves over boiling water for about a minute.

    5. Put half cup of mixture in banana leaves and fold sides into a packet.

    6. Tie with the banana vein or twine.

    7. Place packets in boiling water (enough to cover) and boil for thirty minutes.

    8. Remove leaf covering to serve.
