What You Need: |

1 pound carrots grated
2 cups granulated sugar
2 cups corn oil
6 eggs
3 cups flour
1 teaspoon ginger
˝ teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 cup walnuts
1 cup mixed fruit
1 cup raisins
Vanilla, almond essence and cinnamon to flavor

How To Cook: |

|
1. Preheat oven to 350°F.
|
2. Grease 10 inch pan.
|
3. Sift all dry ingredients (Flour, baking powder, baking soda, sugar, salt).
|
4. Beat eggs while adding oil. Fold in dry mixture and remainder of ingredients.
|
5. Pour in baking pan and bake for approximately one hour or until toothpick comes out clean.
