Chargrilled Lamb With Onions And Peppers

What You Need: |

|
4 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon sweet paprika
4 cloves garlic, crushed
1 teaspoon salt
3 tablespoons olive oil
8 lamb loin chops
2 medium red onions, sliced thinly
2 medium green peppers cut into ˝ inch strips
1 medium yellow pepper, cut into ˝ inch strips
2 tablespoons white wine

How To Cook: |
|
|
1. Blend or process parsley, paprika, garlic, salt and 1 tablespoon of the oil until mixture form a paste.
|
2. Spread paste over lamb until coated, cover; refrigerate 1 hour.
|
3. Heat remaining oil in large saucepan, add onion; cook until onion is soft. Add peppers; cook 2 minutes.
|
4. Add wine, cover; simmer gently, stirring occasionally, 20 minutes.
|
5. Meanwhile, cook lamb in grill pan (or on barbecue or under grill) until cooked through.
|
6. Serve lamb with onion and peppers, accompanied by mashed sweet potato and a green salad, if desired.
