How To Cook: |

1. Put coconut milk, water, margarine, raisins and sugar to boil.

2. Combine cornmeal, flour, cinnamon, nutmeg, salt and vanilla, and add 2˝ cups milk to soften.
|
3. Add to the boiling liquid and stir briskly.
|
4. Lower flame and boil for ten minutes stirring continuously.
|
5. Pour into a greased baking tin, then top mixture of coconut milk, sugar and cinnamon.
|
6. Bake at 350°F in a preheated oven for about 55-60 minutes.
|
7. Remove from oven, cool and serve.
|
8. May be served with Rum Sauce.
