Curried Ackees
What You Need:
  • 24 ackees
  • 1 cup coconut milk
  • ˝ teaspoon salt
  • ˝ teaspoon lime juice
  • 1 teaspoon chutney or hot sauce
  • 2 tablespoons flour
  • 1 tablespoon curry powder
  • 2 tablespoons butter or oil
  • 1 onion
  • 1 red pepper

  • How To Cook:
    1. Wash and prepare ackees for cooking - by discarding seeds and pink lining.

    2. Cook for 5 minutes in boiling, salted water. Drain ackees and set aside.

    3. Heat oil and add curry powder. Cook on slow heat.

    4. Add all ingredients except ackees and bring to a boil. Skim.

    5. Lower heat and cook until the taste of the curry has disappeared.

    6. Add ackees, cook on a very gentle flame until the ackees are tender.

    7. Serve on toasted rounds or bread cups.
