Garlic Pork
What You Need:
  • ¼ pound garlic, chopped
  • 1 teaspoon dried thyme
  • Salt and freshly ground pepper
  • 4 pounds boneless pork leg or shoulder
  • 1 tablespoon lime juice
  • 2 cups white vinegar
  • Vegetable oil for frying

  • How To Cook:
    1. Mix the garlic and thyme together in a small bowl. Add salt and pepper to taste. Set aside.

    2. Wash the pork well with the limejuice and dice into small cubes.

    3. Place the pork in a large saucepan, cover with water, and parboil for about 30 minutes.

    4. Remove the pork, drain, and discard the water. Rub the garlic mixture over the pork.

    5. Place the cubed pork in a large jar or casserole and pour on the vinegar to cover. Cover and refrigerate for 1 to 2 days.

    6. Remove from container, drain, and pat dry with paper towels.

    7. Heat the oil in a deep fryer or tall saucepan and deep fry the meat until tender, about 10 to 15 minutes.

    8. Serve hot as a main course with rice and vegetables or as a snack or appetizer.
