Mannish Water
What You Need:
  • 4 pound goat head, feet and tripe
  • 2 green bananas
  • 1 pound flour
  • 2 hot peppers (scotch bonnet)
  • ˝ pound carrot
  • 2 chochos
  • 2 pounds yam
  • 3 gallons water
  • ˝ pound scallions
  • 4 sprigs thyme
  • Salt to taste

  • How To Cook:
    1. Chop meat into small pieces.

    2. Wash and place in a large stock pot.

    3. Boil for approximately 2 hours or until meat is cooked soft.

    4. Peel bananas and cut into small pieces along with the yam.

    5. Dice all other vegetable ingredients.

    6. Cook uncovered for approximately one more hour.

    7. Use flour to make "spinners" (small dumplings). Add to soup.

    8. Add more water (if necessary) and seasoning to taste. Serve hot.
