1. Oil breadfruit and, with a knife, make a cross at the top and bottom of the fruit.

2. The cross at the top and bottom of the breadfruit allows steam to escape while baking.
|
3. Bake on a greased baking sheet for 1˝ to 2 hours, until fruit yields to the pressure of your thumb.
|
4. Cool slightly, peel, and wrap in a damp dishcloth until you are ready to serve.
|
5. To serve, slice thinly, cutting away centre core.

Leftover breadfruit can be deep-fried, sprinkled with salt, and served with breakfast.
