The Authentic Jamaican Jerk Sauce
What You Need:
  • ½ pound Scotch Bonnet Peppers (may be adjusted as desired)
  • 1 small onion, chopped
  • 3 stalks scallion, chopped
  • 3 sprigs fresh thyme, chopped
  • 3 tablespoons salt
  • 2 tablespoons black pepper
  • 2 tablespoons whole pimento (allspice) berries
  • 1½ tablespoons ground ginger
  • 1 teaspoon nutmeg, freshly grated
  • ½ cup white vinegar
  • ¼ cup soy sauce

  • How To Cook:
    1. In a food processor or blender, puree all ingredients until the sauce is coarse, yet pourable.

    To Make: 2 - 3 cups
