Baked Codfish Cakes
(Bakaliaros Keftedes)
What You Need:
  • 1 pound dried salt cod
  • 4 medium potatoes, cooked and mashed (dry, without milk or butter)
  • ¼ cup milk
  • 1 tablespoon minced onion
  • Cayenne to taste
  • 1 egg
  • Garlic Sauce

  • How To Cook:
    1. Soak cod in cold water for six hours, changing water several times. Drain.

    2. Place cod in a pan and cover with boiling water. Cover pan and let stand for 20 minutes; drain.

    3. Cover fish with more boiling water and let stand for another 20 minutes; drain.

    4. Preheat oven to 350°F.

    5. Flake fish with a fork. Mix flaked fish with mashed potatoes, milk, onion, cayenne, and slightly-beaten egg.

    6. Shape into 2-inch cakes, place in a well-greased baking pan, and bake for 35 minutes or until light brown. Serve with Garlic Sauce.

    To Serve: 4 to 6
