Bechamel Sauce
What You Need:
  • 1 stick (¼ pound) butter
  • 10 tablespoons flour
  • 4 cups hot milk
  • 2 eggs, lightly beaten
  • Salt and pepper to taste

  • How To Cook:
    1. Melt butter in a saucepan and over low heat slowly add flour, blending well.

    2. Add hot milk, stirring rapidly; continue stirring until sauce thickens.

    3. Remove from heat and add eggs, salt, and pepper. Stir to blend.

    NOTE:
    1. Sauce can be kept in refrigerator for 1 day.

    2. To reheat, place sauce in a double boiler, stirring constantly. It can also be reheated in a microwave oven.

    3. Cover with plastic wrap, vent, and heat on medium power. Cooking time varies depending on wattage.

    To Make: 4 cups
