Chicken Liver Phyllo Triangles
(Bourekakia Me Sikotakia)
What You Need:
  • 4 tablespoons butter, plus 1 stick (¼ pound) butter, melted, for brushing
  • 1 cup chopped onion
  • 1 pound chicken livers, coarsely chopped
  • ½ cup grated kefalotiri or Parmesan cheese
  • 1/8 teaspoon grated nutmeg
  • 2 tablespoons cognac
  • Salt and pepper
  • ½ pound phyllo pastry

  • How To Cook:
    1. Preheat oven to 375°F.

    2. Melt 4 tablespoons butter, add onion and saute until soft, about 5 minutes.

    3. Add chicken livers and continue cooking until they are browned. Remove from heat and add cheese, nutmeg, cognac, salt, and pepper.

    4. Prepare stuffed phyllo triangles according to directions and diagrams in How to work with "PHYLLO". Use 1 teaspoon filling per triangle.

    5. Place on ungreased baking sheets and bake for 15 to 20 minutes, or until golden. Serve warm.

    6. These triangles can be prepared ahead of time and frozen, unbaked. When ready to use, preheat oven to 350 degrees. Bake without
