Chicken Pilaf
(Kotopoulo Pilafi)

What You Need: |
|
|
One 2½-to 3-pound chicken, cut into serving pieces
8 tablespoons butter
Salt and pepper to taste
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1 cup chopped onions
3 tablespoons tomato paste
¼ cup cold water plus 2 cups boiling water
1 cup raw converted rice

How To Cook: |

|
1. In a Dutch oven, brown chicken in 4 tablespoons of butter with salt, pepper, and spices.
|
2. Add onions and continue to brown. Dilute tomato paste in cold water and add to the chicken.
|
3. Cover and simmer for about 20 minutes. Add boiling water and stir in rice.
|
4. Cover and simmer for 20 minutes, or until chicken is tender.
|
OPTIONAL:
|
When ready to serve, brown remaining 4 tablespoons butter and pour over chicken and rice.
