Chicken With Orzo

What You Need: |

|
1 stick (¼ pound) butter
½ cup minced onion
One 4-pound frying chicken, cut into serving pieces
2 cups water
1 cup orzo
Salt and pepper to taste
½ cup grated kefalotiri cheese
2 cups plain yogurt

How To Cook: |
|
|
1. In a large skillet, melt butter, add onion, and cook slowly until soft.
|
2. Add chicken and brown on all sides. Add water and bring to a boil. Add orzo, salt, and pepper.
|
3. Lower heat and simmer, covered, for 30 to 40 minutes, or until chicken is tender and all the liquid is absorbed.
|
4. Sprinkle with grated cheese and serve with plain yogurt on the side.
