Codfish Stew
(Bakaliaroyanni)

What You Need: |

|
2 pounds dried salt cod
1 bay leaf
2 pounds small white onions
½ cup olive oil
3-ounce can tomato paste
¾ cup water
Salt and pepper to taste
1 tablespoon minced garlic
½ cup red wine
2 pounds small potatoes, peeled

How To Cook: |
|
|
1. Soak cod in cold water for six hours, changing water several times.
|
2. Put all ingredients except potatoes in a Dutch oven, cover, and bring to a boil. Add potatoes.
|
3. Cook over low heat for about 1 hour, or until potatoes are cooked and fish flakes easily with a fork.
|
4. If liquid cooks away, add a little more water.
