Fish Plaki
(Psari Plaki)
Plaki is a method of cooking, usually with onions, tomatoes, parsley, and olive oil. Though plaki is usually associated with fish, beans plaki and vegetable plaki are also made.

What You Need:
  • 2 large onions, sliced into rings
  • ½ cup olive oil
  • 1 cup coarsely chopped celery
  • 3 scallions, chopped
  • 1 cup chopped parsley
  • 3 fresh tomatoes, sliced
  • 1 tablespoon finely minced garlic
  • 1 bay leaf
  • 2 to 3 pounds fish fillets: striped bass, sea bass, bluefish or tilefish
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 2 whole lemons, sliced into thin rings
  • ½ cup white wine
  • 3 tablespoons fresh lemon juice
  • ¼ cup breadcrumbs

  • How To Cook:
    1. Preheat oven to 350°F.

    2. Saute onions in oil until soft. Add celery, scallions, parsley, tomatoes, garlic, and bay leaf. Simmer until liquid has evaporated.

    3. Place fish in greased baking pan and sprinkle with oregano, salt, and pepper. Cover fish with cooked vegetables.

    4. Decorate with lemon slices. Add wine and lemon juice. Top with breadcrumbs.

    5. Bake for 45 minutes, or until fish flakes easily.
