Fresh Ham With Celery, Avgolemono
(Hirino Yanni Me Selino Avgolemono)
What You Need:
  • One 4- to 5-pound fresh ham
  • 4 tablespoons butter
  • cups chopped onion
  • Salt and pepper to taste
  • 2 bunches celery

    AVGOLEMONO SAUCE
  • 4 eggs
  • 2 tablespoons flour
  • ¾ cup fresh lemon juice

  • How To Cook:
    1. Cut ham into 2-inch cubes. Brown in butter with onion. Add water to cover and salt and pepper.

    2. Bring to a boil, cover, and simmer until meat is almost done, about 1 hour.

    3. Scrub and scrape celery and cut into 2-inch pieces.

    4. Add celery to meat and more water to cover; simmer an additional 30 minutes, until meat and vegetable are done.

    PREPARE THE AVGOLEMONO SAUCE:
    1. Beat eggs in a small bowl until frothy. Add flour and lemon juice, beating well.

    2. Slowly add 2 cups hot liquid from the pot, beating constantly.

    3. Remove pot from heat. Pour sauce back into pot, shaking gently to distribute. Do not allow sauce to boil.

    4. Serve immediately.

    To Serve: 8
