Kourabiedes
Kourabiedes are the favorite cookie of the Greeks-a rich, short cookie covered with powdered sugar. They are made for all festive occasions.

What You Need:
  • 1 pound whipped sweet butter, at room temperature
  • ¾ cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons brandy
  • 4½ cups all-purpose flour confectioners' sugar for dusting

  • How To Cook:
    1. Preheat oven to 350°F.

    2. Whip butter until white. Slowly add confectioners' sugar, vanilla extract, and brandy. Gradually add flour, 1 cup at a time.

    3. Shape into small crescents and place on ungreased cookie sheets. Bake for 20 minutes, or until cookies are sand-colored.

    4. Sift confectioners' sugar onto a large sheet of wax paper. Upon removing cookies from oven, carefully place on sugar and sift additional sugar over tops and sides. Cool thoroughly on racks before storing.

    VARIATION:
Add one cup finely chopped blanched almonds to the soft dough and proceed as above.

    To Make: 75 cookies
