Mushroom Phyllo Triangles
(Bourekakia Me Manitaria)
What You Need:
  • 3 pounds fresh mushrooms
  • ½ cup minced onion
  • 1 stick butter, plus 2 sticks butter, melted, for brushing phyllo (¾ pound)
  • ½ cup grated kefalotiri or Parmesan cheese
  • Salt and pepper to taste
  • ¾ cup bread crumbs, preferably seasoned
  • 1 pound phyllo pastry

  • How To Cook:
    1. Preheat oven to 375°F.

    2. Clean mushrooms thoroughly and chop fine. Saute onion in 1 stick butter until soft and golden. Add mushrooms and stir to blend.

    3. Cook until all liquid from mushrooms has evaporated. Remove from heat and add cheese, salt, pepper, and breadcrumbs.

    4. Fold triangles according to directions and diagrams in How to work with "PHYLLO". Use 1 teaspoon filling for each triangle.

    5. Place on ungreased cookie sheets. Brush tops with melted butter. Bake for 15 to 20 minutes, or until golden. Serve warm.

    NOTE:
        Triangles can be prepared ahead of time and frozen, unbaked. When ready to use, preheat oven to 350°F. Bake without prior thawing for 30 minutes, or until golden. Serve warm.
