Pumpkin Patties
(Kolokithokeftedes)
What You Need:
  • cups grated pumpkin pulp, strained
  • ˝ cup chopped onion
  • 4 eggs
  • 2 tablespoons minced garlic
  • 2 tablespoons minced parsley
  • 1 tablespoon ground cumin
  • 2 cups breadcrumbs
  • Salt and pepper to taste
  • 2 cups flour
  • 1 cup vegetable oil for frying
  • Sesame Seed Sauce (optional)

  • How To Cook:
    1. Combine all ingredients except flour, oil, and Sesame Seed Sauce; blend well.

    2. Shape into 2-inch patties, and roll in flour.

    3. Fry in vegetable oil until golden brown. Drain on paper towels.

    4. Serve warm accompanied by Sesame Seed Sauce (optional).

    To Make: about 40 small patties
