Spaghetti With Browned Hutter Sauce
(Makaronia Me Kavourdismeno Voutero)
What You Need:
  • 1 pound spaghetti (#8 or #9) or 1 pound macaroni
  • 1 stick (¼ pound) butter
  • ½ cup grated kefalotiri cheese

  • How To Cook:
    1. Cook spaghetti according to package directions and drain well.

    2. Meanwhile, melt butter in a small frying pan.

    3. Add 2 or 3 tablespoons of grated cheese to butter and allow both butter and cheese to brown lightly, stirring all the while.

    4. Put drained spaghetti into a serving bowl. Sprinkle with remaining grated cheese and keep tossing so that cheese penetrates throughout.

    5. When butter and cheese mixture is lightly browned, pour over spaghetti.

    VARIATION:
    1. 2 finely minced cloves garlic can be added to the browned butter.

    2. Plain yogurt can also be added as a topping.

    3. For a richer taste, double the amount of butter.

    To Serve: 4 to 5
