Sweet Fritters
(Loukoumades)

Loukoumades, a well-loved dessert, are sweet fritters fried in hot oil until golden brown and served warm with honey syrup and cinnamon.
|
What You Need: |
|
|
2 tablespoons active dry yeast, softened in ˝ cup warm water
1 tablespoon sugar
2 cups milk
3 cups all-purpose flour
1 egg
Vegetable oil for frying, approximately 2 cups
Ground cinnamon for topping
SYRUP
1 cup honey
1 cup water
2 cups sugar

How To Cook: |
|
|
1. Combine the yeast-water mixture with sugar, milk, flour, and egg to make a very thick, sticky batter.
|
2. Cover with plastic wrap and a damp towel; let rise for 1 hour.
|
PREPARE THE SYRUP:
|
1. Combine all ingredients in a large saucepan. Bring to a boil, and simmer for 15 minutes. (Syrup should be warm when dribbled over the fritters.)

2. In a deep-frying pan, heat 3 inches of oil to 360°F.
|
3. Drop tablespoonfuls of batter into oil and fry until golden on all sides. Remove fritters from oil and drain on absorbent paper.

4. Dribble warm syrup over them. Place on racks to drain and sprinkle with cinnamon. Serve immediately.

VARIATION:
|
1. Instead of syrup, warmed honey can be used as a topping. Place one 16-ounce jar of honey, uncovered, in hot water.
|
2. Simmer until warm. Dribble warmed honey over the puffs.
|
