Egyptian Beef & Okra
What You Need:
  • 1 pound ground beef
  • ½ cup minced onion
  • 1 large clove garlic, minced
  • 1 can (10¾ ounces) condensed tomato soup
  • 1/8 teaspoon pepper
  • 1 egg, lightly beaten
  • 2 tablespoons fine dry bread crumbs
  • 1 package (10 ounces) frozen whole okra, cooked and drained
  • Butter
  • Lemon slices (for garnish)

  • How To Cook:
    1. Brown beef in a skillet; add onion and garlic and cook until tender (use shortening if necessary), stirring to separate meat.

    2. Pour off fat. Add soup, pepper, egg and bread crumbs; bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally.

    3. Arrange okra around buttered 1-quart casserole with tips toward center and ends along the outside; spoon soup mixture over okra.

    4. Bake in preheated 375°F oven 30 minutes, or until set; let stand 10 minutes.

    5. Invert on serving platter; garnish with lemon slices.
