Fish Teriyaki
What You Need:
  • 1 cup soy sauce
  • ¼ cup sugar
  • 2 teaspoons finely-grated ginger root
  • 1 clove garlic, minced
  • 2 pounds ocean perch filets (or other rock fish)
  • 1 tablespoon toasted sesame seed
  • ½ teaspoon butter

  • How To Cook:
    1. Mix the soy sauce, sugar, ginger root, and garlic. Marinate the fish in this mixture for several hours, turning occasionally, as needed.

    2. Put the sesame seed and butter in a small dish and toast in the microwave oven stirring often. (This should take about 2 minutes.) Set aside.

    3. Arrange the fish in a rectangular baking dish large enough to put it in a single layer, if possible. Arrange the thicker portions of the fish to the outer edges of the dish.

    4. Sprinkle on about 2 tablespoons of the marinade and the sesame seed. Cover with wax paper and cook in the microwave oven until the fish will flake easily with a fork (about 10 minutes).

    TIP:
        Very little of the marinade should be put in with the fish when it is cooked, as fish is very moist when prepared in the microwave oven. Toasting the sesame seed is more Korean than Japanese, but it helps to bring out the sesame flavor.
