Jiffy Fish
What You Need:
  • ¼ cup water
  • 1 small piece of ginger root, minced
  • ½ teaspoon salt
  • 2 pounds fish (opakapaka)
  • 2 tablespoons toasted, crushed sesame seeds
  • 4 teaspoons oil
  • ¼ cup soy sauce
  • Pepper to taste
  • Monosodium glutamate (MSG)
  • ½ cup finely-chopped green onions

  • How To Cook:
    1. First place the sesame seeds with a few drops of oil in a custard cup or other small dish and toast in the microwave oven, stirring often. (This should take about 2 minutes or less.)

    2. Then, crush the seed by placing in a plastic sandwich bag and striking with a hammer a few times.

    3. Put the water, ginger root, and salt in a covered casserole and simmer, covered, for several minutes to bring the flavor of the ginger into the water.

    4. Add the fish and cook, covered, in the microwave oven for 5 minutes. Turn the fish over gently so as to not break it up.

    5. Cook, covered, in the microwave oven until the fish is done and will flake easily (about 5 minutes more). Put the fish on a warm serving plate.

    6. In the small dish, mix the sesame seed, remaining oil, soy sauce, pepper, and MSG. Heat but do not boil. Pour over the fish. Sprinkle on the chopped green onion.

    TIP:
        Mince the ginger as fine as possible so there will be no hot bites in the fish. Fish cooked in the microwave oven will remain tender and moist.
     
    To Serve: 6 to 8
