Red Mexican Rice
(Arroz Rojo A La Mexicana)
What You Need:
  • ¼ cup salad oil
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • 1 cup raw rice
  • 2 cups water
  • 1 cup carrot, chopped
  • 1 cup green peas
  • ½ cup diced potato
  • 3 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

  • How To Cook:
    1. Place all ingredients-in a 2-quart covered casserole and mix well.

    2. Cook in the microwave oven about 16 minutes, stirring occasionally, until the liquid is absorbed and the rice and vegetables are tender.

    3. Add more water during the cooking time, if needed.

    TIP:
        Set the casserole in a cake or pie dish so that, if the liquid boils over, it will be caught in the dish and can be put back into the casserole.
