How To Cook: |

1. Put the bacon in a casserole and cook until crisp (about 2 to 3 minutes). Set the bacon aside on a piece of paper toweling. Discard all the bacon fat except for 1 tablespoon.

2. Add the pea pods to the bacon fat and cook, covered, stirring from time-to-time, until the pea pods are bright green and just barely tender.

3. Crumble the bacon and add to the peas. Season to taste.

4. If frozen pea pods have been used, add 1 teaspoon cornstarch for thickening when you start cooking the peas.

TIP:

A delightful addition is ½ cup of sliced water chestnuts or ¼ cup finely-chopped onion cooked in with the peas. Another time, try ½ cup chopped mushrooms; or how about ¼ cup chopped cashew nuts. There is no end to the interesting variations.
