Spicy Pork Stew
(Puerco Adobado)
What You Need:
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 slices bacon, diced
  • 2 tablespoons chili powder (or more)
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • 2 pounds lean pork, cut into 1-inch cubes
  • 1 can (1 pound, 3 ounces) tomatoes
  • 2 cans (4˝ ounces) chopped ripe olive

  • How To Cook:
    1. Place all except the tomatoes and olives in a large covered casserole and mix well. Form into a ring shape in the dish.

    2. Cook, covered, in the microwave oven 30 minutes, stirring occasionally.

    3. After each stirring, push food to outer perimeter of the casserole. This speeds up the cooking.

    4. Add the tomatoes and olives. Stir well. Cook uncovered 10 minutes more, stirring occasionally.

    5. Excellent served over rice.

    To Serve: 4 to 6
