Spinach And Nut Salad

What You Need: |
|
|
1˝ pounds (2 bunches) fresh spinach
˝ cup minced onion
1 tablespoon olive oil
1 cup yogurt
1 clove garlic, minced
˝ teaspoon salt
1/8 teaspoon pepper
2 tablespoons chopped, fresh mint or 1 teaspoon dried mint
˝ cup chopped walnuts

How To Cook: |
|
|
1. Wash the spinach thoroughly and drain. Remove coarse stems and chop finely.
|
2. Put in a covered casserole and cook in the microwave oven until barely tender (about 4 to 5 minutes).
|
3. Add the onion and oil to the spinach and mix carefully so as not to mash the vegetable.
|
4. Add the garlic, salt, pepper and mint to the yogurt. Stir gently into the spinach.
|
5. Chill. Garnish with the nuts.

TIP:
|
Take care not to overcook the spinach and to allow for residual cooking. The spinach should be tender but not mushy.
