Superb Bean Burritos
Plain Bean Burritos are just cooked beans wrapped in a softened tortilla. This version is much more sophisticated and delicious.

What You Need:
  • 1 softened flour tortilla
  • ¼ cup refried beans
  • 1 stick Monterey Jack cheese (¼ to ½ inch square)
  • 1 strip green chili (about ½ inch wide)
  • 1 tablespoon sour cream (or more to suit taste)

  • How To Cook:
    1. Soften tortilla (see directions below).

    2. Place beans in a strip along the center of the tortilla. Add the green chili and the cheese, placing along the line of the beans.

    3. Spread sour cream on top of these. Fold in top and bottom ends of tortilla and then fold in sides to make an envelope.

    4. Place seam side down on a serving plate. Heat approximately1 minute for each burrito on the plate or until the filling is hot.

    SOFTENING FLOUR TORTILLAS:
    1. Dip each flour tortilla into water quickly and drain well.

    2. Place on a plate and heat in the microwave 30 seconds.

    3. Transfer to a warm plate and keep covered until ready to use.

    To Make: 1 burrito
