Cauliflower In Hot Vinegar
(Coliflor Al Ajo Arriero)
What You Need:
  • 1 small head of cauliflower
  • ¼ cup water
  • 2 cloves garlic, cut in half
  • 1 teaspoon paprika
  • 2 tablespoons salad oil
  • 2 tablespoons wine vinegar
  • 2 tablespoons cooking liquid
  • Salt and pepper to taste

  • How To Cook:
    1. Wash and trim the cauliflower and break it into spoon-size pieces. Put into a covered casserole and add ¼ cup water.

    2. Cook in the microwave oven, covered, until almost tender. Drain and reserve the cooking liquid.

    3. Put the oil and garlic in a small dish. Cook in the microwave oven for 2 to 3 minutes.

    4. Discard the pieces of garlic. Stir in the paprika, vinegar and 2 tablespoons of the cooking liquid.

    5. Pour over the cauliflower and cook, covered, in the microwave oven for 2 or 3 minutes more.

    TIP:
        Do not overcook the cauliflower during the first cooking, as there are still 2 or 3 minutes more of cooking plus the residual cooking that will take place naturally.
