Leek Dish
(Papet Vaudois)
What You Need:
  • 4 medium potatoes, peeled and sliced
  • 4 large leeks cut into rings (well-cleaned)
  • 1 cup beef broth or bouillon
  • 1 tablespoonflour
  • 2 tablespoons milk
  • 1 teaspoon salt
  • Dash of pepper
  • ¼ teaspoon dried basil leaves
  • ¼ teaspoon dried thyme leaves
  • 1/8 teaspoon ground nutmeg
  • ½ pound sliced bacon
  • ½ pound bratwurst sausage

  • How To Cook:
    1. Place the potatoes and the leeks in layers in a covered casserole. Add ½ cup beef broth. Cook, covered, until almost tender (about 30 minutes).

    2. Stir together the flour, seasonings, and milk. Stir in the remaining beef broth. Pour into the casserole and set aside.

    3. Cook the bacon between paper towels in the microwave oven until browned (about 8 minutes). Place on top of the casserole.

    4. Cook the bratwurst sausage in a covered casserole in the microwave oven for 5 minutes. Slice and arrange on top of the bacon.

    5. Cook the casserole, covered, 5 minutes more in the microwave oven. Let stand 5 minutes.

    To Serve: 6
