Peppers And Tomatoes
(Paprika Tomaten Gemuse)

What You Need: |

|
½ pound bacon
2 onions cut into rings
1 clove garlic, minced
4 green peppers, seeded and cut into strips
1 pound tomatoes, peeled and cut into wedges
¼ teaspoon salt
1/8 teaspoon pepper
¼ teaspoon thyme
½ cup dry white wine
1 cup diced semi-soft cheese (Gruyere or Port du Salut)

How To Cook: |

|
1. Cook the bacon crisp on a microwave oven roasting rack or on overturned saucers in a large rectangular dish (about 10 minutes). Crumble the bacon.

2. Reserve 2 tablespoons of the drippings. Add the onion, garlic, and peppers to the 2 tablespoons bacon drippings in a covered casserole.

3. Cook in the microwave oven for 5 minutes. Add the tomatoes, wine, and seasonings. Stir. Cook, covered, 5 minutes more.
|
4. Add the cheese and crumbled bacon. Reheat long enough to melt the cheese. Serve with dark bread.
