Rice, Mushroom, And Chicken - Liver Stuffing
(Farce Ebocation D'Albufera)

What You Need: |
|
|
3 cloves garlic, finely minced
¼ cup dry white wine
1 cup chicken broth
¼ pound fresh mushrooms, chopped
2 tablespoons minced shallots or green onions
1 tablespoon butter
3 chicken livers, chopped
2½ cups cooked rice
¼ teaspoon thyme or oregano
1 egg slightly beaten
Salt and pepper to taste

How To Cook: |
|
|
1. In a covered casserole, cook the garlic, mushrooms, shallots and butter 5 minutes in the microwave oven.
|
2. Add the chicken livers and cook 3 minutes more. Add the wine and the broth and heat to a simmer.
|
3. Mix in the rice, herbs, and egg. Season to taste. Stuff the Volaille Demi-Desossee.
