Sweet And Sour Cabbage
What You Need:
  • 3 slices bacon, diced
  • ¼ cup chopped onion
  • 2 tablespoons flour
  • ¼ cup vinegar
  • ¼ cup water
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • ¼ cup brown sugar, packed
  • 6 cups finely-chopped red cabbage
  • 1 teaspoon caraway seed (optional)

  • How To Cook:
    1. Put the bacon and onion in a covered casserole and cook in the microwave oven 5 minutes.

    2. Stir in the flour and then the vinegar and water.

    3. Add the salt, pepper and sugar and stir. Add the cabbage and caraway seed and stir well to coat the cabbage evenly.

    4. Cook, covered, in the microwave oven for 8 to 10 minutes, stirring several times.

    5. Add enough water to almost cover the cabbage and cook 1 minute more to heat through.

    TIP:
        The cabbage should have some texture and crispness left. How much crispness depends upon your preference. Remember, the longer the cabbage is cooked, the more the strong (often objectionable) cabbage flavor and odor are developed. The quick cooking of the microwave oven allows cabbage to be naturally sweet. If you prefer a sweeter, less sharp flavor to the dish, add more sugar or use slightly less vinegar.
