Zabaglione
What You Need:
  • 6 egg yolks
  • ¼ cup sugar
  • ½ cup sweet dessert-type wine (Marsala, white port, etc.)

  • How To Cook:
    1. In a mixing bowl, beat the egg yolks and sugar until the eggs are thick and yellow. Beat in the wine. Place in the microwave oven uncovered.

    2. While it takes only 2 minutes cooking time, it is necessary to follow these instructions carefully. At the end of the first 30 seconds, beat the mixture until smooth and frothy.

    3. At the end of the second 30 seconds, do so again. At the end of the third 30 seconds, repeat the beating.

    4. At the end of the next 15 seconds, beat again, being certain that the pudding is completely smooth.

    5. Cook the remaining 15 seconds and beat smooth one last time.

    6. Pour this heavenly mixture into 4 dessert dishes and serve the pudding warm or chilled. (Warm is the traditional way.)

    7. It may be garnished with whipped cream and shaved chocolate or with maraschino cherries.

    TIP:
        If your oven has 700 watts output, the pudding may not take quite all of 2 minutes to cook. Do not let the pudding overcook. It should be very soft but hold its shape. If your oven has fewer than 600 watts output, you may have to add a little more time to reach the desired consistency. If this is needed, add the time in 15 second increments and beat smooth after each 15 seconds.
