Cuban Lamb Shanks
What You Need:
  • 1 tablespoon olive oil
  • 3 cloves garlic, peeled and finely chopped
  • 1 medium yellow onion, peeled and chopped
  • 3 pounds lamb shanks, sawed in 1½-inch pieces
  • One 8-ounce can tomato sauce
  • 1 tablespoon (see our recipes: 1, 2, 3)
  • 2 tablespoons chopped parsley
  • Salt and freshly ground black pepper to taste
  • ¼ teaspoon dried oregano
  • ¼ teaspoon ground cumin
  • 1 cup Chicken Stock or use canned

  • How To Cook:
    1. Heat a 4- to 6-quart stove-top covered casserole.

    2. Add olive oil, garlic, and onion. Saute for 5 minutes.

    3. Add lamb shanks along with remaining ingredients, cover, and simmer 1 hour and 45 minutes, until lamb is very tender.

    4. These can be served with Yellow Rice or white rice.

    To Serve: 4 - 5
