Green Pepper And Tomato Sauce

What You Need:
  • 6 tablespoons freshly rendered lard or oil
  • 1 tablespoon Hungarian paprika
  • 1 teaspoon salt, or more to taste
  • ˝ tablespoon sugar
  • cups peeled and sliced yellow onions
  • 4 cups cored, seeded, and sliced Anaheim green peppers or sliced but not seeded Cubanelle peppers
  • 1 pound ripe tomatoes, diced

  • How To Cook:
    1. Heat a large frying pan and add the lard or oil. Add the paprika and salt and cook for a moment or two.

    2. Add the remaining ingredients, cover, and simmer until all is tender, about 15 minutes.

    3. Taste to see if you need additional salt.

    4. This sauce can be served as a side dish as it is, but it's great if you use it with Hungarian Sausage.

    To Make: 4 cups
