Lebanese Rice Pilaf
What You Need:
  • ¼ cup Chinese egg noodles or thin spaghetti, broken into ½-inch pieces
  • 3 tablespoons olive oil
  • 2 cups long-grain rice
  • 4 cups cold water
  • Salt to taste

  • How To Cook:
    1. In a small frying pan, saute the noodle pieces in the olive oil until they are golden brown. Careful, they burn easily!

    2. Wash the rice, drain it, and place it in a small pan with a tight-fitting lid.

    3. Add the water and the toasted noodles and oil. Add the salt.

    4. Bring to a boil; reduce the heat to low, and cook, covered, for 20 minutes.

    To Serve: 6 - 8
