This is spicy, sweet, vinegary . . . all at once. The Indians love such blends and you will be surprised at how well this goes with many dishes.

What You Need: |

10 black peppercorns
½ teaspoon red pepper flakes
½ teaspoon ground dried ginger
1 tablespoon coriander seeds
1½ teaspoons cumin seeds
1½ teaspoons anise seeds
2 cloves garlic, peeled
¾ pound golden raisins, soaked in ½ cup warm water for 1 hour, drained
1 tablespoon chopped fresh coriander
2 teaspoons salt
1 cup sugar
5 tablespoons distilled white vinegar

How To Cook: |

|
1. Grind the peppercorns, red pepper flakes, ginger, coriander, cumin, and anise seeds in a small electric coffee grinder or spice grinder.

2. Place the garlic in a food processor and chop fine.
|
3. Add the raisins and chop coarsely by pulsing the machine.
|
4. Add the remaining ingredients, including the spices and vinegar, and chop to a coarse paste texture.
