Spinach And Squid
Traditionally this dish is made of cooked ti leaves and octopus.

What You Need:
  • Two 10-ounce boxes frozen whole spinach
  • One 10¾-ounce can cream of chicken soup
  • 1¼ pounds squid, cleaned and cut in rings
  • Pinch of ground white pepper
  • Salt to taste



  • How To Cook:
    1. Defrost the spinach and drain.

    2. Chop it up just a bit and heat in a large saucepan along with the soup.

    3. When all is simmering, add the squid and simmer gently until tender, about 10 minutes.

    4. Season with pepper and salt to taste.

    5. This is simply eaten with a spoon or your fingers.

    TIP:
        ON CLEANING SQUID. Buy frozen or fresh squid that are about 5 to 6 inches long. Pull off the head and set aside. Squeeze out the filling from the tube and discard. Rinse the tube and remove the clear plastic-like backbone of the creature. You can save the tentacles, but not the head, for other dishes.
