What You Need: |

One 3-pound fryer chicken, cut up into 8 serving pieces
4 cloves garlic, peeled and crushed
1 teaspoon dried oregano
1 teaspoon salt
Freshly ground black pepper to taste
1 batch Yellow Rice
2 tablespoons olive oil

How To Cook: |
|
|
1. Rub the chicken pieces all over with the garlic, oregano, salt, and pepper.
|
2. Marinate, covered, 1 hour on the kitchen counter or overnight in the refrigerator.
|
3. Heat a large frying pan and add the oil.
|
4. Pan-fry the chicken pieces over medium heat until golden brown, about 15 minutes per side.
|
5. Serve on top of Yellow Rice.
